Cucumber Kimchi with White Seasoning

Ingredients

· 5 Cucumbers

· 10 Radishes

· 2 Pears

· Purified Water

· 3T Naturally Brewed Soy Sauce

· 1C Salt

· 5T Sugar-preserved Green Plum

Directions

Wash the cucumbers with salt to cleanse thoroughly. Soak the prepared cucumbers in boiling salted water.

Meanwhile, finely shred ½ pear and radishes. Add the Naturally Brewed Soy Sauce and sugar-preserved green plum to the prepared pear and radishes and mix with hands.

Grate the remainder of the pears and sieve to collect juice. Add the purified water, Naturally Brewed Soy Sauce, salt and sugar-preserved green plum to the juice to prepare the solution.

Cut cucumbers into 3cm pieces and make cross-cuts. Stuff the cucumbers with the mixture in 2. above and pour the solution.
